Cookery - Class 69 Carrot Cake Tray Bake
Line square tin size approx. 20cm/8" 160c Fan, Gas 4
200g carrots peeled and grated on fine side of grater Icing
200g Self Raising Flour 50g softened butter
175g brown sugar 75g icing sugar
1 tsp. bicarbonate of soda 200g soft cheese
Zest of 1 orange
150ml sunflower oil
Put grated carrot in bowl
Sift flour, bicarbonate of soda and cinnamon and put on top of carrot
Then add orange zest and sugar and mix together.
Add eggs and oil and mix together well.
Scoop mixture into prepared tin and level top
Cook for 30 minutes. Test with skewer and if not cooked pop back into oven for 15 mins or until ready.
Mix butter and icing sugar together then stir in soft cheese until smooth. When cake is completely cool spread over the icing. Decorate if you wish -
Cookery Men Only - Class 75 Easy Boiled Fruit Cake
2lb Loaf tin, lined – 160c, Gas 4 Cooking time 45mins – 1 hr.
110g (4oz) Hard Margarine or Butter
225g (8oz) Mixed Fruit
170g (6oz) Brown Sugar
2 tsp Mixed Spice
1 tsp Bicarbonate Soda
2 tbls amaretto liquor (can be omitted)
225g (8oz) Self Raising Flour
1 pinch salt
2 eggs lightly beaten
Put sugar, water, dried fruit and margarine in pan and bring to boil. Cook for 2 minutes stirring continuously. Leave to cool.
Mix Flour, bicarbonate of soda, mixed spice and eggs in a bowl.
Pour into the cooled boiled mixture and blend together.
Pour into prepared tin and smooth top.
Check after 45mins cooking, testing with skewer, pop back into for another 15mins if still moist. Leave in tin to cool.
Notes:This is nice sliced and spread with butter I cooked this for 1 hour and it was just right p8
